A 48-hour tonkotsu broth
Both of our ramen bowls start with a tonkotsu broth we make in-house over 48 hours of cooking. On top go the ramen noodles and toppings: cured egg, shiitake mushrooms, sweet corn, bean sprouts, leek and nori.
Tonkotsu Ramen or Spicy Miso Ramen
Tonkotsu Ramen is served in our tonkotsu broth. Spicy Miso Ramen uses the same base, infused with traditional miso paste and a few drops of our house chili oil for a spicy kick. Both come with cured egg, shiitake, sweet corn, bean sprouts, leek and nori.
